Magnificent Granadilla Muffins

200g whole-wheat flour
100g oat bran
10ml baking powder
5ml salt
60ml brown sugar
2 eggs
115g or 1 small tin granadilla pulp
Preheat the oven to 180°C. Lightly grease muffin pan. In a medium size bowl, mix whole wheat flour and oat bran, baking powder, salt and sugar. In a separate bowl add the apple sauce, yogurt and two eggs. Mix well. Add the granadilla pulp and mix. Pour the wet ingredients into a well, made in the centre of the dry ingredients. Mix until all dry ingredients are well moistened. Spoon muffin mixture into muffin pan. Bake in oven for 20-30 minutes or until the outside turns golden brown and toothpick inserted in the of muffins comes out clean. Remove from oven and allow to cool before placing on a wire rack.

250ml self raising flour

60ml cocoa powder
125ml margarine
125ml brown sugar
2 eggs
Icing
60ml cocoa powder
45ml margarine
45ml milk
250ml icing sugar
Sift the flour, salt and cocoa powder together. Cream the margarine and sugar until light and fluffy.
Add the eggs one at a time beating well after each addition. Fold the sifted dry ingredients into the creamed mixture. Turn into greased 22cm square tin. Bake at 180° for 30 - 40 minutes or until the centre
Pancake Delights

250ml (1 cup) Skim milk
160g Cake flour
1 egg
2 egg whites
Pinch salt
½ tsp baking powder
Combine milk, flour, eggs, salt, and baking powder in a blender. Heat a small non-stick pan. Pour one-eighth of the mixture into it, and swirl the batter so that it covers the bottom of the pan evenly. Cook over a moderate heat until edges and underside are almost set. Flip the pancake when base is loose and golden brown. Cook for a further 30 seconds. Tip out onto a plate. Repeat the process until all the mixture is used up. The recipe makes 8 pancakes.
Blueberry and Banana Bread

1¾ cups self-raising flour
¼ cup cake plain flour
2/3 cup firmly packed brown sugar
¾ cup mashed overripe banana
125ml low-fat milk
2 eggs
50g butter, melted, and cooled
1 tsp vanilla essence
200g blueberries
Lightly coat a loaf tin with non-stick spray and set aside. Sift both flours into a large mixing bowl along with the sugar. In a second bowl, combine the banana, milk, eggs, melted butter and vanilla essence, and mix well. Add the banana mixture and blueberries to the flours mixture and mix until just combined. Spoon the mixture and mix until just combined. Spoon the mixture into the prepared loaf tin and bake at 180°C for 50 minutes, or until a skewer or knife inserted comes out clean. Leave to cool for a few minutes before turning onto a wire cooling rack.
Tasy tip: Replace the blueberries with strawberries, gooseberries or even chopped apples.

Banana Rumba

4 medium, ripe bananas (70g each), peeled
30ml rum (or use Rum essence if you do not
wish to include alcohol)
5ml vanilla essence
5 ml ground cinnamon
360ml fat free/low fat frozen yoghurt
100g mixed nuts, chopped
Peel and freeze the bananas.
Place the frozen bananas in a liquidiser with the rum, vanilla and cinnamon. Serve over the frozen yoghurt and top with the chopped nuts.

Berry Meringue

2 tsp sugar
1 ½ vanilla essence
200g raspberries
3 tbs Slimsy Passion fruit Squash
¼ tsp cinnamon
Turn oven onto 220°C
Beat the egg whites with an electric
beater until soft peak stage (3 to 4 minutes),
slowly add the sugar and vanilla
whilst beating.
Continue beating to form stiff peaks. You should be able to
turn bowl upside down without the eggs pouring out.
Combine the berries and Brooks Low Call Passion Fruit
Squash in a large pan and cook till heated through and
slightly soft.
Spoon mixture into 2 ramekins and place egg white mixture
on top. Lightly tap with the back of a spoon to form peaks.
Dust with cinnamon and place in oven till golden.
Serve immediately.

1¾ cup oats
3 egg whites
½ cup cocoa powder
½ cup applesauce
1 tsp vanilla essence
½ cup plain low-fat yogurt
½ tsp cream of tartar
1½ tsp baking powder
1½ tsp baking soda
¼ tsp salt
1 cup hot water
½ cup Sweetener
Grind the oats with a stick blender or food processor. Add remaining ingredients, and blend until smooth. Spoon the mixture into 12 cupcake casings in a muffin tin, and bake at 180°C for 15 minutes. Leave to cool and serve with custard or diet frozen dessert from your daily serves.
