Blueberry-Lemon Iced Tea

480g frozen blueberries
½ cup fresh lemon juice
4 cups water
3 tea bags
2 tsp Stevia sweetener
Bring the frozen blueberries and ½ cup fresh lemon juice to a boil in a large saucepan over medium heat. Cook, stirring occasionally, 5 minutes. Remove from heat, and pour through a fine wire-mesh strainer into a bowl, using back of a spoon to squeeze out juice. Discard solids. Wipe saucepan clean.
Bring 1 litre of water to a boil in same saucepan; add 3 tea bags and leave to brew for 5 minutes. Remove and discard tea bags. Stir in the Stevia and blueberry juice mixture. Pour into a pitcher; cover and chill 1 hour. Serve over ice.

Sweet Melon and Pear Tonic

120g lemon
240g sweet melon, peeled
100g pear
Squeeze the juice of the lemon. Combine the sweet melon and lemon juice in a blender. Add the pear and blend until smooth. Top with ice cubes.

Apple and Cucumber Punch

200g apples, peeled and chopped
200g cucumber, peeled and chopped
10ml lemon juice
250ml sugar-free lemonade
Push the apple and cucumber chunks through juice. Mix apple, cucumber and lemon juice together and pour in glass. Top up with diet lemonade.

1 (70g) banana (peeled)
75g strawberries
175ml vanilla yoghurt
10ml peanut butter
Handful of ice cubes
Place the peeled banana in the freezer and freeze for two hours. Add the banana and the remaining ingredients to a blender and blend until smooth. Serve immediately or place in a plastic juice bottle and freeze overnight.

½ cup water
2 tbsp sugar replacement
2 tbsp lemon juice
1 banana
Place the cubed watermelon in the freezer and leave to freeze for at least three hours. Place all ingredients into a blender and blend until smooth.
Serve.
